How To Smoke A5 Prime Rib

  1. Recommended charcoal - hardwood (oak, hickory, sugar maple).
  2. Heavily season exterior with salt and pepper prior to cooking. Seasoning it overnight is preferable, but at minimum, 60 minutes prior to cook start.
  3. For a spiced crust, use a Dijon mustard or mayonnaise to help herbs affix to roast and form crust.
  4. Stud top of roast with 25 garlic cloves (roughly 3 heads).
  5. Grill at 250 to 300°F, keeping heat below 300.
  6. Smoke for 3.5 hours until it hits an internal temperature of 140°F for medium, 135°F for medium-rare.
  7. Allow to rest 3 minutes per pound.
  8. Do not cover with foil. Leave uncovered to retain superior crust.

How To Roast A5 Prime Rib

  1. Heavily season exterior with salt and pepper prior to cooking. Seasoning overnight is preferable, but at minimum, 60 minutes prior to cook start.
  2. Stud top of roast with 25 garlic cloves (roughly 3 heads).
  3. Preheat oven for 15 minutes at 500°F.
  4. Place roast on wire rack on sheet tray or turkey roasting pan with rack.
  5. Place roast on middle rack of oven and cook for 15 minutes.
  6. Turn off oven.
  7. Let it sit in oven until it hits 140 degrees°F (4-5 hours). Do NOT open oven for at least 3 hours.

Your Japanese A5 Wagyu Prime Rib will arrive frozen, with enough time to fully thaw before the holidays. To defrost your Prime Rib safely, use the steps below:

  • Leave the Prime Rib in its original, unopened packaging
  • Put the Prime Rib in a tray or pan to thaw evenly in the fridge, set to 40°F or lower
  • Allow approximately 7-8 hours per pound for thawing
