Japanese A5 Wagyu Picanha
Often the most prized cut in Brazilian steakhouses, Our A5 Wagyu Picanha (also known as Top Sirloin Cap) from Kagoshima Prefecture is an extremely hard-to-find cut that combines the perfect balance of marbling, extreme tenderness and robust flavor. Cut from the top rump of the cow, the Picanha is triangular in shape with a thick fat cap that protects the meat while cooking and adds immense flavor as it renders out. Picanha cuts are roast size that will range from 3-5 pounds. Picanha can be enjoyed as a full roast or cut into individual steaks.
