While Sockeye is bold, Coho is mild - making it perfect for those who enjoy more subtle-tasting fish. It packs more flavor than a fillet of white fish, but is much milder than the fuller flavor of Sockeye or King Salmon. Copper River Coho Salmon
Coho Salmon, aka the silver salmon, has a luscious red-orange color to it. It’s slightly leaner and has a milder flavor profile than Sockeye or King. As Rich explains, "It's heartier textures and mild and buttery flavor lends itself to fall recipes." Because it’s lean, you should cook this fish for a shorter period of time than you would for a King or Sockeye Salmon. If searing, sear it skin-side down until the skin is crispy and the flesh turns from pink to white, then flip the fillet and let the residual heat from the pan finish it. If baking it, bake it the same way Rich does, on a cedar plank nestled in vegetables.

In the rare cases where an animal gets sick or requires medical attention, antibiotics are only used therapeutically — never to promote growth or to "proactively" prevent diseases.

In other markets, animals are not typically provided enough space to build up their muscle, so hormones are given to promote growth. In contrast, our farms take the extra time, care, and effort to allow their animals to grow the way nature intended, gaining weight naturally.
