The trim from this process, combined with chuck, round, and other parts of the cow to target a perfect 83/17 mix of meat/fat ratio, results in a vastly superior product compared to what you’ll find at the grocery store. Less water-weight means you get more of what you pay for and ensures a nice sear plus an unrivaled rich and beefy flavor. In the rare cases where an animal gets sick or requires medical attention, antibiotics are only used therapeutically — never to promote growth or to "proactively" prevent diseases.
