Weekday Lunch Meal Prep by Ashley Hutton (@simply_lchf)

With fall approaching, I’ll be making casseroles and crockpot meals non-stop. My favorite casserole to meal prep with is super simple and uses Crowd Cow ground beef.

Ingredients:

  • 1.5 lbs ground beef
  • Butter
  • Small can of crushed tomatoes
  • 8oz cheese, shredded (cheddar or monterey jack are great)
  • Taco or chili seasoning blend

To prepare:

  1. Preheat your oven to 400F
  2. Cook the Ground Beef in butter on the stovetop
  3. Season the beef (any taco or chili seasoning blend is great!)
  4. Add the crushed tomatoes and simmer for 4-5 minutes
  5. Place half of the mixture in an oven-safe dish, top with half of the cheese, then repeat the process for the rest of the beef mixture
  6. Bake for 15-20 minutes
  7. Divide this into a few containers for meal prep and you’re set for the week!
