Loco Moco
Enjoy this Hawaiian comfort food any time of the year with fresh beef and rich gravy.Servings: 4 Prep Time: 10 minutes Total Time: 45 minutes
INGREDIENTS
- 1 ½ lbs ground beef
- 1 tbsp minced garlic
- 2 tbsp soy sauce
- 2 large sweet onions, sliced ½ inch thick
- 2 cups beef or chicken stock
- 1 tbsp cornstarch and water
- 4 eggs
- 3- 4 cups cooked rice
PREPARATION
Heat a large wok or saute pan to medium high and add oil. Once the oil is hot, add sliced onions and saute until caramelized. Remove from heat and set onions aside. Meanwhile, cook 3-4 cups rice as preferred.
In a medium bowl, combine ground beef, garlic, and 1 tbsp soy sauce. Season with salt and pepper and mix. Form 4 patties about ½ inch thick.
Heat the same pan to medium high and swirl oil to coat the bottom of the pan. Once hot, add the patties. Cook the patties for about 4 minutes per side (for medium-rare). Remove from heat and set aside patties until ready to serve.
In the same pan on medium low heat, add caramelized onions, beef stock, and remaining soy sauce. Simmer for several minutes to reduce. Whisk in cornstarch slurry and gently stir to thicken gravy. Season with salt and pepper to taste.
Heat a small pan to medium high and swirl oil in the bottom of the pan. Once hot, crack eggs into the pan. For sunny-side up, cook eggs for 1 minute then cover for an additional 2-3 minutes while keeping the yolk soft. Remove from heat and set aside until reader to serve.
To serve, divide rice and patties among four bowls. Generously spoon over onion gravy. Place the egg on top and enjoy while hot.
