Kevin Griffith is raising the healthiest red meat around.
When his father underwent quadruple bypass surgery at the age of 54, farmer Kevin Griffith was determined to raise the healthiest red meat possible. His research led him to Wagyu. Famous for its flavor and marbling, Wagyu beef also has higher percentages of monounsaturated fat than normal beef and contains omega-3 and omega-6 fatty acids. It also has the lowest cholesterol levels of all meats, and contains oleic acid which is considered good for your heart.
Founded over 100 years ago, Hi View Ranch covers 3,000 acres of grassland in Midlothian, TX. Kevin was raised on a farm, but spent more than a decade in the aeronautic industry before being drawn back to farming. He took over the ranch four years ago.
The Wagyu cattle at Hi View enjoy a 100% vegetarian, all-natural diet based on Japanese traditions. During winter months, the cattle eat winter ryegrass and wheat, and in spring and summer, they feed off of Coastal Bermuda, native Blue Stem, Side Oats, Gramma, Clover, and Crabgrass. This mix is ideally suited both to the local climate and to producing exceptional beef.
