There was a sizable amount of solid white cap fat on the steak. (Obviously wagyu doesn’t need that type of fat left on the steak because it has so much inner muscular fat

there was a thick section of fat running right through the middle of the tiny steak that make it hard to eat. outside of that it was very good but that was a real bummer.
