Very little gristle and silver skin. It was butchered very nicely, often ribeyes come with a bunch of not good eats. Delicious steak, while it doesn't have the marbling of corn fed beef the taste and texture were far superior.

1 of the 4 ribeyes was not up to par. I had to trim the silver skin outside like I trim a brisket. It was disappointing but the other 3 were excellent.

The two I've eaten so far were both more tough and less flavorful than I expected. It may be that this is because they were partially thawed by the time they arrived, but they also had extensive gristle around one edge that did not soften during the cooking process.
