wow. had never had this before. I couldn't bring myself to cook it. Just rinsed it and ate it raw, it was perhaps the best salmon sushi I've ever had. amazingly fresh and melts in your mouth. so good.

This was my first wagyu and the experience was worth the price but at that price I do t expect 10% of it to be gristle. I sliced it in 1" strips, salted, pan seard and enjoyed. The texture was at times gelatinous. The flavor was good but didn't knock my socks off.
