Wish the size of the scallops was more uniform so that cooking them all at once resulted in them all being done at the same time. Some of the scallops were quite a bit smaller than the largest sized ones.

The beef itself was great quality, but the cut was misproportioned. One end of the steak was about 1/4 inches thick while the other end was about 3/4 inches thick. This lead to uneven cooking where the thin section was almost well done and the thick section was a perfect medium rare. Again, the quality of the meat was top notch, but the steak I was sent was of drastically uneven thickness.
