I have ordered this cut from mishima reserve before and it was a much better experience than this time. I cooked in sous vide to a med rare and cut against the grain yet the meat was very very tough. It was a little embarrassing because i cooked this steak for someone who hasnt had wagyu before and they were not impressed. This was not like the top sirloin i have ordered before because this was below average for a regular steak let alone a wagyu. It was as tender as an eye round steak.

The box 2nd time in a row just wasn't going to let me try for the first a steak. We are from Texas so I have ate some good beef. This was going to be my first, twice even. I was refunded etc. Just a bummer due to it not being available at that price. So for now we will settle for the 2 bone in ribeyes and some sirloin. I hope it comes in like it has before all good.
