Ribeye is a rich and beefy cut that is best cooked over high heat, so the outside browns quickly while the inside stays juicy and tender. Season with salt and pepper. To pan-sear, use a heavy stainless steel, carbon steel or cast iron pan with a light oil over high heat and sear each side for 1 to 2 minutes, then transfer the whole pan to a pre-heated 350°F oven for 7 to 10 minutes for a perfect medium rare. To grill, cook over medium-high heat for 6 to 8 minutes per side, or until it reaches the doneness you want. Either way, rest the steak at least 5 minutes before slicing so the juices redistribute.
