In Spain’s Castilla y León, lamb is more than an ingredient — it’s a tradition centuries in the making. From the high plains around Zamora, Moralejo Selección works with regional shepherds to bring us heritage Merino lamb known for its clean, mineral flavor and natural tenderness.

Alongside these beautifully balanced cuts, you’ll find Spain’s most prized expression of lamb: Lechazo. Raised exclusively on mother’s milk and harvested at less than 30 days old, this celebrated suckling lamb is pale, delicate, and incredibly tender — the same lamb traditionally roasted in clay dishes in the wood-fired ovens of Castilian asadores.
