Chinese Braised Beef Shank with Wheat Noodles

This is the rare dish where you can walk away for three hours and come back to a mouth-watering meal that tastes like it came from a high-end Chinese restaurant.

Servings : 4-6 Prep Time: 15 minutes Total Time: 3 hours and 30 minutes

INGREDIENTS

  • 2 lbs beef shank
  • 2 inch ginger piece, cut into thin cross sections
  • 6 scallions, 4 crushed and 2 thinly sliced
  • 2 tbsp chopped cilantro
  • 2 pieces star anise
  • Zest of one orange
  • 2-5 dried Chinese chilies, depending on spice preference
  • 3 cups beef stock
  • 1/3 cup soy sauce
  • 1/4 cup rice wine
  • 1/3 cup dark soy sauce
  • 1 bunch Chinese Greens
  • 1 lb Chinese wheat noodles

PREPARATION

Combine all of the ingredients except the noodles, cilantro, and sliced scallion in a stock pot. Bring the liquid to a simmer. Add the shanks to the pot and continue simmering for 2.5 to 3 hours, or until meat is tender.

In a separate pot, boil water and cook the noodles according to the package directions. Remove the noodles and reserve the cooking liquid. While the water keeps boiling, submerge the Chinese greens. Let cook for 2 minutes and then remove from the pot.

In a soup bowl, place a portion of noodles. Add the beef and ladle in the soup. Add in some of the greens. Top with scallions and cilantro.
