- Salt and pepper
- 1 cup white flour
- 2 cups olive oil
- 2 tbsp butter
- 3 garlic cloves, minced
- 2 tsp ground coriander
- 1 tbsp Lemon juice
Trim the white lining away from the kidney, and then cut it into 1-inch cubes. Season lightly with pepper and salt. Coat the pieces with flour.
In a heavy-bottomed pan, heat the olive oil on medium-high heat. Add the kidney and fry until almost cooked through. About 3 minutes. Remove the kidney and reserve.
In the same pan, add the butter, garlic, and coriander, and cook until garlic turns golden brown. About 30 seconds. Add the kidney back in, and sprinkle with lemon juice. Cook for another 1 minute, sprinkling with salt and pepper, to taste.
