Recipe by @vertsmoke
Ingredients
- 2lb Wild Dungeness Crab
- One stick of unsalted butter
- 2 tbsp chopped chives
- 1 clove of mashed garlic
- Zest of half a lemon
- 1 tbsp Old Bay seasoning
- 1 tbsp yellow mustard
- 1 tsp red chile flakes
- Pinch of salt and pepper
- Juice of one lemon
- Grilled Sourdough
- Prep time
- 2 minutes
- Cook time
- 10 minutes
Instructions
- Defrost the crab overnight in the fridge.
- Set up your grill for medium-high direct heat.
- Preheat a cast iron pan on the grill. To create a compound butter sauce, add all ingredients but the crab, stir and allow butter to melt.
- Grill the crab 3 minutes per side — just enough to slightly char and impart some smokey flavor (reminder you're just warming it through, the crab comes pre-cooked).
- After grilling, toss the crab into the butter lemon mixture. Let the sauce bubble and then reduce for approximately 3 minutes over the direct heat. Be sure to thoroughly coat every piece of crab in the sauce.
- Serve immediately with lemon, and grilled sourdough.
