Grilled Wolffish with Roasted Garlic Mayo and Lemon

Enjoy the clean fresh taste of Wolffish by keeping your recipe simple. While it cooks longer than other fish, Wolffish is firm and holds up well on the grill. This is a light dish with a little bit of garlicy, lemony zest. This is a perfect recipe to enjoy the fish on its own or to pair with wild rice or a bed of greens.

Grilled Wolffish with Roasted Garlic Mayo and Lemon by Niceland Seafood

Ingredients

  • 14 oz Wild Icelandic Wolffish fillets
  • 6 tbsp olive oil
  • 1 tsp fennel seeds
  • 1 clove of garlic
  • 5 cloves of garlic
  • 3/4 cup mayo
  • 3 tbsp oz lemon juice
  • 3 tbsp honey
  • 1/2 shallot
  • 4 tbsp olive oil
  • 1 tsp salt

Instructions

  1. To make your vinaigrette, finely chop shallot and mix well with lemon juice, honey, olive oil and salt. Set aside.
  2. To make roasted garlic mayo, roast garlic at 340°F for 15 minutes and then let cool. Mash it well and mix with mayo in a bowl. Set aside.
  3. Mix garlic, fennel seeds, and oil together in a blender or food processor. Transfer to shallow dish or plastic bag. Place fillets in mixture and let marinate for at least 10 minutes.
  4. Heat frying pan to medium-high heat and melt butter in pan.
  5. Remove Wolffish from marinade and drizzle a little more olive oil on top. Grill 8-10 minutes on each side — until cooked but not dry and to an internal temperature of 125°F.
  6. Drizzle mayo and lemon vinaigrette on top to finish and serve as is or on a bed of greens and or wild rice.
