Split the shell, perch the meat on top, baste in garlic-herb butter. Lobster on the grill, properly.

A clean split-and-stack method puts the meat right where the smoke and butter can reach it.

Directions

  1. With sharp kitchen shears, cut each tail down the back to the fins.
  2. Use your thumbs to separate the top and bottom of the shell from the meat.
  3. Rest the meat on top of the shell and place the tails on the grill.
  4. Grill at 400°F, allowing 1 to 2 minutes per ounce, or until the internal temperature reaches 140°F.
  5. Baste with garlic and herb butter and serve.
