Dry-Aged Beef
You throw part of the steak away, and that is the point.
Dry-aging is holding whole cuts of beef uncovered in a cold, humidity-controlled room for weeks. Two things happen: moisture evaporates, concentrating flavor, and the beef's own enzymes break down connective tissue, making it more tender. The dried outer crust is trimmed away before sale.

What is actually happening. Two separate processes run at once, and people tend to credit the wrong one.
The first is evaporation. An uncovered subprimal loses water for the whole time it hangs, which concentrates everything left behind. This is most of why a dry-aged steak tastes more intensely beefy.
The second is enzymatic. Calpains and cathepsins already present in the muscle keep breaking down proteins and connective tissue after slaughter. This is what makes the steak more tender, and most of the tenderising is done within the first two to three weeks.
Why it is done on whole subprimals and never on steaks. Cut the beef into steaks first and you multiply the exposed surface without adding any volume, so almost the entire piece becomes crust that has to be trimmed off. Hang it whole and the interior is protected by everything around it — the same reason a large roast holds a rare centre. This is also why dry-aging one steak in a home fridge does not work. It dries; it does not age.
Why it costs more. You pay for time, for refrigerated space, and above all for yield loss. Between evaporation and trimming the hard, dark outer crust (the bark), a dry-aged subprimal can lose a substantial share of its starting weight before a single steak is cut. That loss is priced into what you buy.
Dry-aged is not the same as wet-aged. Almost all beef is aged to some degree; most of it is wet-aged, vacuum-sealed in its own juices in the bag it shipped in. Wet-aging tenderises but does not concentrate, because nothing evaporates. When a label just says 'aged', it usually means wet.

Longer is always better
Most of the tenderising is done in the first two to three weeks. Past about 45 days you are buying flavor intensity, not tenderness — and it becomes a matter of taste rather than quality.
All aged beef is dry-aged
Most aged beef is wet-aged in vacuum packaging, which tenderises but does not concentrate flavor because no moisture leaves. If a label says only 'aged', it usually means wet-aged.
