How to Cook Filet Mignon in the Oven

Use this guide to cook Filet Mignon — one of the most tender, juiciest cuts of beef available — in the oven! All you need is a cast-iron skillet, butter, garlic, thyme, salt and pepper.

Ingredients

  • 2 8oz Filet Mignon
  • 2 Tbsp Butter
  • 1 Garlic Clove - Smashed
  • 3 Sprigs Thyme
  • Salt
  • Black Pepper

Instructions

  1. Heat your oven to 500°F. Place your cast iron pan in the oven and allow it to heat up for 10 minutes. This will cause a decent amount of smoke so you may wish to remove your fire detectors.
  2. Just before taking the pan out of the oven, season both sides of the filets with salt and pepper.
  3. Place the filets in the pan (a few inches apart) and put in the oven. Cook for 4 minutes.
  4. Flip the filets over and cook another 4 minutes.
  5. Remove from the oven and put your butter, garlic and thyme in the pan. Your butter will melt almost immediately -- using a spoon, hold the pan at an angle and ladle the melted butter (now infused with garlic and thyme) over the steaks constantly for about 20-30 seconds.
  6. Remove the steak from the pan and allow to rest for 5 minutes before slicing/serving.
  7. Serve with a little of the pan's butter on top and enjoy!
