So for what you're purchasing, you want the marbling but not an ounce of fat concentrated with no meat on the edge. Considering the price per ounce. Great taste, trimmed properly per the cost would be best. Will not order this again.

Was a delicious piece of meat, but disappointingly had a large piece of fat in the steak (not marbling) that took up at least 1/3 of the piece. Surprised that made the "cut" for what you would send out, considering the cost and the photos on your website (it was about twice the size of the fat on the slightly hidden middle steak on your website).
