Shabu shabu is more than just fun to say: it’s a seriously delicious cut of meat. This comes from the chuck roll, also known in Japan as kurashita, and cut into paper thin slices that can be used for so many great dishes, or shared as small bites amongst friends. It is intensely marbled, decadent, and packed with umami flavor.
Shabu Shabu is a Japanese hotpot dish of thinly sliced meat and vegetables boiled in water and served with dipping sauces. The term comes from the “swish swish” sound of the meat being stirred into the cooking pot.
While there are many other traditional Japanese dishes that can be prepared with this cut such as teriyaki steak rolls, nikujaga, gyudon, & niku udon, this is also the perfect cut for an outer-worldly Philly cheesesteak. Or enjoy on its own by cooking on a screaming hot pan for just a few seconds on each side with a pinch of salt.
