my baby sister (ha -- she's 61!) is moving to another state, and I served the Wagyu steaks at a farewell dinner while we were going through old pictures and memorabilia. Made it a memorable event indeed! I served it with beets steamed with their greens, homemade spaetzle sauteed in butter, and fresh arugula salad. YUM

I would like to see this cut 2cm cut. The problem with the 3/4” height is that you can’t see enough of the beautiful pink in the cross-section when you cook it at 125 F/51 C
