This was my first wagyu and the experience was worth the price but at that price I do t expect 10% of it to be gristle. I sliced it in 1" strips, salted, pan seard and enjoyed. The texture was at times gelatinous. The flavor was good but didn't knock my socks off.

I cooked for my team at work did the WAGYU with some light stir fried vegetables in the wagu oil- amazing! MY boss thought it was thick cut bacon it was so tender to him .. My other boss said that's the best steak hes ever had where can he get IT?? LOL, so hopefully you guys will get a lot more business from Long Island NY...ALWAYS impressed and appreciative M. J.
