Ingredients
- 6 Fossil Farms Bison NY Strip Steaks (≈ 9 oz each)
- 1½ cups extra-virgin olive oil (green or gold)
- 3 cloves garlic, minced
- ¾ cup dry red wine
- 1 tsp ground black pepper
- ½ tsp salt
- Cook time
- 6 hours
Instructions
- In a small bowl, combine the olive oil and garlic.
- While whisking, slowly add the red wine to form an emulsion.
- Stir in black pepper and salt, mixing thoroughly.
- Place the bison steaks in a non-aluminum container. Pour the marinade over them and turn to coat evenly.
- Marinate for at least 6 hours or overnight, turning the steaks several times.
- Preheat your grill to 400–450 °F (direct heat).
- Remove steaks from the marinade (let excess drip off) and grill over direct heat.
- Cook about 3–5 minutes per side, aiming for medium-rare doneness.
- Remove from heat and rest for 5 minutes before serving.
- Serve whole or slice against the grain into thin slices.
