Grilled Bison NY Strip Steaks Marinated in Red Wine by Fossil Farms

Ingredients

  • 6 Fossil Farms Bison NY Strip Steaks (≈ 9 oz each)
  • 1½ cups extra-virgin olive oil (green or gold)
  • 3 cloves garlic, minced
  • ¾ cup dry red wine
  • 1 tsp ground black pepper
  • ½ tsp salt

Instructions

  1. In a small bowl, combine the olive oil and garlic.
  2. While whisking, slowly add the red wine to form an emulsion.
  3. Stir in black pepper and salt, mixing thoroughly.
  4. Place the bison steaks in a non-aluminum container. Pour the marinade over them and turn to coat evenly.
  5. Marinate for at least 6 hours or overnight, turning the steaks several times.
  6. Preheat your grill to 400–450 °F (direct heat).
  7. Remove steaks from the marinade (let excess drip off) and grill over direct heat.
  8. Cook about 3–5 minutes per side, aiming for medium-rare doneness.
  9. Remove from heat and rest for 5 minutes before serving.
  10. Serve whole or slice against the grain into thin slices.
