Pesto Steelhead Trout
The small Steelhead Trout filets cook extremely fast with crispy skin and tender, flaky flesh. We recommend keeping your recipe simple to enjoy the perfect subtle flavor with just salt, pepper and pesto.

Ingredients
- Steelhead trout filet
- Oil
- Salt & Pepper
- Pesto
- Prep time
- 5 minutes
- Cook time
- 10 minutes
Instructions
- Dry steelhead filets with paper towel.
- Add oil, and salt and pepper to taste on both skin and flesh side.
- Place skin side down on a 500°F oiled flat top.
- Immediately spread a thin layer of your favorite pesto on the flesh
- Cool for roughly 6 minutes for medium-medium rare, do not flip during the cook.
- Serve immediately and enjoy!
