Pollo Asada Con Limón
This pollo asada con limón is a fun way to change up our Pasture-Raised Chicken Thighs and Chicken Drumsticks. This recipe is the perfect mix of fresh citrus and salty garlic flavor — a combination that is guaranteed to make your taste buds sing.
Ingredients
- 2lbs Pasture-Raised Chicken Thighs and Drumsticks
- 1/4 c oil
- 1/4 c lime juice
- 2 tbsp Cholula
- 2 tsp salt
- 1 tbsp salt
- 1/2 tbsp pepper
- 2 tsp cayenne
- 2 tsp cumin
- 1 tsp onion powder
- 3 tsp garlic powder
- 2 tsp guajillo powder
- 1 tsp cloves

Instructions
- To make a wet rub, combine oil, lime juice, Cholula and salt. Set chicken in this mixture and let marinate for 2 hours.
- To make a dry rub, combine salt, pepper, cayenne, cumin, onion powder, garlic powder and gloves.
- When ready, remove chicken from wet rub and coat generously with the dry rub.
- Char chicken skin side down on the grill. Then cover and close lid to let cool for 3 minutes with heat at 500°F. Open lid, flip chicken and turn heat to low. Cover again and finish cooking for about 10 minutes with heat no higher than 240°F.
- Remove, serve and enjoy!
