Ground Chicken
Chicken and trim run through a grinder. It carries more water and less fat than ground beef, which is why it turns grey and wet in a pan instead of browning, and why it slumps out of a burger. Both problems come down to structure you have to add yourself.

Browning is a water problem. Meat cannot brown until its surface is dry and above roughly 300°F, and water boiling off pins the surface at 212°F until it is gone. Lean poultry has a lot of water to shed and little fat to speed the heat transfer, so a cool or crowded pan never gets past the steaming stage. Hot pan, oil in first, thin layer, and no stirring until a crust forms — then break it up.
A panade is not a filler. Bread soaked in milk and worked into the mix traps water in a starch gel that stays put under heat, and the starch physically gets between the meat proteins so they cannot bind into something dense. That is why a meatball with a panade is both juicier and softer, and it matters far more in lean poultry than it does in beef.
Chill it before you shape it. Warm ground poultry smears rather than holding an edge. Twenty minutes in the fridge is the difference between a patty that keeps its shape on the grill and one that falls through the grates.

Common questions
Can I substitute ground chicken for ground beef?
In sauces, chilis and fillings, one for one. For burgers, add a binder and expect a softer patty. Season it harder than you would beef — there is much less fat carrying flavor, and the same quantity of salt and spice reads as noticeably milder.
Is it safe to eat ground chicken pink?
No. Grinding takes whatever was on the surface of the meat and distributes it through the entire batch, so unlike a whole cut there is no interior that was never exposed. 165°F all the way through, every time — the same reason a rare burger is a different risk from a rare steak.
Should I grind it myself?
If you own a food processor, it is worth doing for burgers and meatballs. Grinding boneless thighs yourself gives you control over the fat, which is the one variable that decides how the mix cooks. Freeze the meat for fifteen minutes first — firm meat cuts cleanly, soft meat smears.
Does ground chicken freeze well?
It freezes fine and thaws wetter than beef does, because there was more water in it to begin with. Thaw it in the fridge rather than in water, then blot it dry before it goes in the pan, or you spend the first several minutes boiling off the thaw.
