Bison lovers consider the flavor of bison superior to beef, with its rich, bold flavor and slightly sweeter finish. Don't forget bison (also known as buffalo) is also a healthier alternative to beef, it is an excellent source of lean protein, less saturated fat than beef, and loaded with omega 3 acids. Each patty weighs about 1/3 lb, with 3 patties per package.

A Slow & Quiet Life

Durham Ranch’s herds originate from Yellowstone National Park and live a slow and quiet life on a sprawling 55,000 acres in Wright, WY. Their herds are handled as little as possible due to the breed’s independent nature, and develop naturally on pasture without the use of growth hormones or unnecessary antibiotics. Bison also help cultivate the land naturally: their split hooves break up the soil as they roam and their diet of mostly broadleaf plants means they naturally fertilize the land through their waste. These facts, along with other conscientious husbandry practices, help to maintain the vitality of the meat.

Durham Ranch is a third-generation family-owned business founded by their patriarch, Armando Flocchini Sr, who bought the ranch in 1965 after successfully running Durham Meat Company in San Francisco working as a butcher. At the time, raising Bison was a niche market, but Armando’s entrepreneurial spirit led him on the right path. Today, the same ranch is run by the Flocchini family and remains one the largest bison operations in North America. As members of the National Bison Association, Durham Ranch continues to advocate for good animal and land husbandry as well as educate consumers about this special animal to ensure that their family and other ranchers can enjoy this way of life for generations to come.
