I would have preferred more fat on the top. The pictures seemed to show a great thick fat layer but the actual cut appeared to be have been trimmed to remove most of the fat.

These were delicious.... slow cooked for hours and after they reached a tender stage I turned up the heat and browned the ribs. They were very tasty. The only issue is the amount of fat in the pan was a LOT.
