I had a problem with these patties. They were much thinner than my last order and fell apart as I laid them on the grill. I lost a significant portion that fell through the grate and ended up in the fire. Not acceptable! I love the prior patties that were much thicker and had no issues.

Not great. Sub prime at best. I sous vide the cut to 128 and then seared. The steak was pretty dried out. I would go to your local butcher and get a prime New York or go to snake river farms if you are looking for a higher end cut of beef. I also got an olive wagyu cut that was really good. Stay away from ranch farms.
