From Award-Winning Shokunin Akio Kato

In Japan's wagyu world, one farmer stands out as perhaps the epitome of shokunin — Akio Kato of Kato Wagyu, located in Ota City, Gunma Prefecture. "Shokunin" is a Japanese word without a direct English translation — the closest is "craftsman" or "master of one's profession." But these simplistic translations fail to capture a deeper devotion and dedication, sometimes lifelong, to reach a certain perfect command over one's area of expertise. Single-Origin Farm, Superior Quality Control

No doubt due in part to his shokunin dedication to his craft, Akio Kato practices high levels of quality control almost unheard of in Japan or anywhere in the world. Kato grows his own corn, used to feed his heard, and attained the expertise and licenses to run his own breeding programs at his farm. This program has allowed him to develop the genetics and quality of his wagyu over many years — which started with his father, Tsutomu Kato, just after World War II in 1946.

Kato Farm produces A5 Wagyu, including BMS 12 — the very highest grade and quality of beef in the world, representing only .01% of the supply.
