Mediterranean Beef Skewers

2 lbs ground beef 2 tbsp lemon juice, and zest from from one lemon 1.5 tbsp chopped fresh oregano 2 tsp ground coriander 4 garlic cloves, finely minced 1 tsp light olive oil Kosher salt and freshly ground black pepper 1 ts...
  • 2 lbs ground beef
  • 2 tbsp lemon juice, and zest from from one lemon
  • 1.5 tbsp chopped fresh oregano
  • 2 tsp ground coriander
  • 4 garlic cloves, finely minced
  • 1 tsp light olive oil
  • Kosher salt and freshly ground black pepper
  • 1 tsp turmeric
  • .5 tsp ground cumin
  • 1 egg
  • 1/4 cup bread crumbs
  • 10-inch wooden skewers, soaked 30 minutes
  • 1 tbsp vegetable or canola oil

Mix all of the ingredients until roughly combined. Avoid over-mixing to avoid gumminess.

Separate the mixture into ten parts. Roll and flatten each part along the skewer so that it is about 1-inch wide and fits about 6 inches up the skewer.

Brush each skewer with oil and season with salt and pepper.

Over a hot grill, char and cook the skewers until done (about 3 minutes per side).
