Mediterranean Beef Skewers
2 lbs ground beef 2 tbsp lemon juice, and zest from from one lemon 1.5 tbsp chopped fresh oregano 2 tsp ground coriander 4 garlic cloves, finely minced 1 tsp light olive oil Kosher salt and freshly ground black pepper 1 ts...- 2 lbs ground beef
- 2 tbsp lemon juice, and zest from from one lemon
- 1.5 tbsp chopped fresh oregano
- 2 tsp ground coriander
- 4 garlic cloves, finely minced
- 1 tsp light olive oil
- Kosher salt and freshly ground black pepper
- 1 tsp turmeric
- .5 tsp ground cumin
- 1 egg
- 1/4 cup bread crumbs
- 10-inch wooden skewers, soaked 30 minutes
- 1 tbsp vegetable or canola oil
Mix all of the ingredients until roughly combined. Avoid over-mixing to avoid gumminess.
Separate the mixture into ten parts. Roll and flatten each part along the skewer so that it is about 1-inch wide and fits about 6 inches up the skewer.
Brush each skewer with oil and season with salt and pepper.
Over a hot grill, char and cook the skewers until done (about 3 minutes per side).
