Oven Roasted Chuck Steaks with Wine Sauce

Baking chuck steaks with dry white wine helps tenderize the steaks and makes them juicy.

Servings : 2 Prep Time: 10 minutes Total Time: 1 hour 10 minutes

INGREDIENTS

  • 2 12 oz chuck steaks
  • 3 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 large shallot, finely chopped
  • 1/3 cup dry white wine
  • Salt and pepper
  • 3 tbsp finely chopped fresh chives
  • 2 tbsp finely chopped fresh parsley
  • Aluminum foil

PREPARATION

Preheat oven to 400 degrees F. Pat steaks dry and sprinkle both sides liberally with salt and pepper.

Heat the olive oil in a heavy skillet over moderately-high heat until the oil is hot but not smoking. Sear the steaks so that they brown evenly on all sides. Add the wine to the pan, and scrape the bottom to remove any stuck bits.

Pull out a sheet of aluminum foil measuring about 8 inches by 8 inches. Place the steaks, butter, shallot, and herbs on the foil. Begin folding the foil edges upwards to form an enclosed container. Pour the wine from the skillet into the container and seal up the foil. Bake for 1 hour.

Serve steaks with sauce drizzled over them. Add salt and pepper to taste.
