Greek-Style Grilled Lamb Loin Chops

Ingredients

  • Lamb Chops
  • 2 pkgs New Zealand Spring Lamb® Loin Chops (defrosted if frozen)
  • ¼ cup olive oil
  • 4 cloves garlic, minced
  • 1 lemon, juiced and zest
  • ¼ cup plain Greek yogurt
  • 1 tbsp dried oregano
  • 1 tsp freshly ground black pepper
  • 1/2 tsp sea salt
  • Whipped Feta and White Beans
  • 1 can (540 mL) white kidney beans
  • 1 cup crumbled feta cheese
  • 2 cloves garlic, minced
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 1/2 tsp ground white pepper
  • ½ tsp smoked paprika (optional)

Instructions

  1. Lamb Chops
  2. Combine all of the ingredients in a large re-sealable plastic bag; seal and refrigerate for up to 12 hours.
  3. Preheat grill to medium-high (350ºF).
  4. Remove chops from marinade and dry slightly with a paper towel.
  5. Place on a lightly oiled grill and cook for your preferred level of doneness.
  6. Whipped Feta and White Beans
  7. In the bowl of a food processor combine all ingredients and whirl until smooth; taste and season, cover and refrigerate until ready to serve.
