Turkey Chili
This easy turkey chili is a delicious way to use turkey leftovers and will warm you up on any cold day! The recipe is excellent on its own or loaded with cheese and onions and is large enough to serve a whole family.
Ingredients
- 2 tbsp olive oil
- 2 cups onion, chopped
- 1 cup green bell pepper, chopped
- 4 garlic cloves, chopped
- 2 tbsp chili powder (add more for added spice)
- 1 tbsp ground cumin
- 3 15 ounce cans of crushed tomatoes
- 1 tbsp tomato paste
- 1 cup turkey or chicken stock
- 2 15 oz cans of dried kidney beans, drained
- 1 tsp dried oregano
- 1 tbsp salt (more to taste optional)
- 1/2 tsp black pepper
- 3-4 cups shredded cooked turkey
- 1-3 tsp sugar (optional)

Instructions
- In a large 8-quart pot, heat olive oil on medium-high heat. Add the onions and green peppers, stirring until they are golden, about 5 minutes.
- Add the garlic, chili powder and cumin then stir for 1-2 more minutes.
- Add tomatoes, tomato paste, stock, kidney beans, oregano, salt, pepper and cooked turkey meat. Bring this mixture to a simmer then reduce heat to low. Simmer, partially covered, for an hour.
- Add salt and sugar to taste to balance the acidity of tomatoes and achieve your desired flavor.
- Serve as is or top with shredded cheese, chopped onion, or sour cream.
