How to Grill Pork Chops

Pork chops respond well to medium heat and the same quarter-turn discipline you'd give a good steak. Peaches on the side make it a meal.

Directions

  1. Oil the pork chops and season with salt and pepper.
  2. Preheat the grill to 350°F (medium heat).
  3. Place the chops in the center of the grill over direct heat.
  4. Cook for 2 to 3 minutes, then rotate 45° for cross-hatched grill marks.
  5. Cook another 2 to 3 minutes, then flip.
  6. For a sweet complement, add halved and pitted peaches brushed with oil, cut-side down.
  7. Cook the chops another 2 to 3 minutes, then rotate.
  8. Finish for another 4 to 6 minutes, or until the internal temperature reaches 145°F. Total cook time runs 10 to 15 minutes.
  9. Remove from the grill and rest for 5 minutes.
