Lamb Shank

The one part of a lamb that being young does not rescue.

The lower leg never stops working — it holds the animal up and drives every step. So it is dense connective tissue around a narrow bone, with almost no marbling. Youth makes the rest of the carcass tender; down here it changes nothing at all. This is a braise, and it is a braise measured in hours.

Collagen is the whole story. The muscles below the knee and hock are permanently under load, so they are wrapped and threaded with the connective tissue that carries it. Cook them like a chop and that tissue is rubber. Hold them wet, above roughly 160°F, for two to three hours, and it dissolves into gelatin — which is what makes a good braise sticky on the lips, and what makes the meat feel moist even though by then it is technically well past well done.

None of that is lamb-specific. It is exactly why beef shin and osso buco work. What is lamb-specific is scale: this is a single-serving piece of meat where the beef equivalent has to be sawn into rounds, so it is the rare braise you can portion before cooking rather than after.

Front and back are not the same thing. The hind one comes off the leg and is bigger and meatier. The front one comes off the shoulder and is smaller and bonier. Two of the former feed two people comfortably; two of the latter probably do not. Sellers are not always explicit about which you are getting, so buy by weight.

Time cannot be traded for heat. A hotter oven does not speed up the conversion of collagen to gelatin — it just squeezes the muscle fibres harder while you wait, and drives the liquid off. A bare simmer, covered, is the entire method.

On price: this used to be a scrap cut and it is not priced like one any more. Slow-cooked cuts across every animal — brisket, short rib, oxtail, pork cheek — have been found by enough cooks to move them off the bottom shelf. Still good value against a rack. No longer a bargain.

How it eats

Nothing like the rest of the animal until it is cooked properly, and then unlike anything else on it — dense, sticky, falling off the bone. Deeply flavoured, and a good deal of that flavour ends up in the braising liquid, which is rather the point.

Common questions

How long does it actually take?

Two to three hours at a bare simmer, covered, for a hind one; less for a small front one. There is no temperature to pull at, because you are waiting on a texture rather than a number. The test is a skewer sliding into the thickest part with no resistance and the meat starting to pull back from the bone.

Why is mine still tough after three hours?

Almost always not long enough rather than too long. Tough at that stage means the connective tissue has not converted yet, and the fix is more time. The other two causes are a braise that was boiling rather than simmering — hard boiling tightens the muscle fibres — and a pot left uncovered, which loses the liquid the conversion needs.

Does a pressure cooker work?

Yes, and it is the one shortcut that genuinely does, because pressure raises the temperature of the liquid above boiling and collagen converts faster the hotter it gets. Around 45 minutes at high pressure instead of three hours. What you lose is reduction — nothing evaporates in a sealed pot, so the liquid comes out thin and wants boiling down afterwards.

Is this the same thing as osso buco?

Osso buco is a shape and a method rather than an animal — the same part of the leg sawn across the bone into thick rounds, so each piece has a ring of marrow in the middle. It is usually veal, sometimes beef, and on a lamb the piece is small enough that it is normally left whole instead. Same muscle, same cooking, different butchery.
