Collagen is why a shank behaves the way it does. Under fast heat it contracts and wrings moisture out of the muscle around it, which is how you end up with something dry and chewy at the same time. Held above roughly 160°F in liquid, though, it slowly dissolves into gelatin — and that is a function of time, not of hitting a number. This is the one cut where a thermometer tells you nothing useful: the meat reaches its final temperature in the first hour and stays there for two more while the actual cooking happens. A fork is the instrument. Push it in and twist; any resistance means it needs longer.
The gelatin is also why braising liquid from a shank sets to a wobble in the fridge and coats your lips at the table, and why lean cuts never give you that no matter how carefully you cook them. Get real colour on every surface before any liquid goes in — that browning becomes the base of the sauce, and pale shanks make a thin, pale one. Then bring the liquid about two-thirds of the way up rather than covering them: submerged meat just poaches, while the exposed top keeps concentrating. Rest them in their own liquid, and reduce that liquid to serve.

Common questions
Can it be overcooked?
Yes, though it takes some doing. Past the fork-tender point the muscle fibres keep shedding moisture and eventually go dry and stringy even sitting in liquid — the gelatin masks it for a while, then stops. Aim for tender and stop there; "the longer the better" is only true up to a point.
Front shank or hind shank?
Hind shanks come off the back leg and are noticeably bigger and meatier, which is why they are the ones usually sold on their own. Front shanks come off the shoulder and are smaller. They braise identically; you just need more of the front ones.
Can I roast or grill one?
Not with any success. Dry heat drives moisture out long before the collagen has time to convert, so you get dry and chewy together. Lamb for dry heat is the leg, the rack or chops — the shank is not a cheap route to those.
Why is it so much cheaper than the rack?
Because price follows convenience rather than quality. A shank needs three hours and a pot, and the cuts that need fifteen minutes and a pan get bid up. Nothing about a shank is second-rate — it is the same animal, doing the work that built the flavour.
