Lemon-Finished Sautéed Kidney (Easy & Simple)

A simple sauté of beef kidney finished with garlic, coriander, and a bright squeeze of lemon.

    Trim the white lining from the kidney, then cut into 1-inch cubes. Season lightly with salt and pepper, then coat the pieces in flour.

    In a heavy-bottomed pan, heat the olive oil over medium-high. Add the kidney and fry until almost cooked through, about 3 minutes. Remove and reserve.

    In the same pan, add butter, garlic, and coriander. Cook until the garlic turns golden brown, about 30 seconds. Return the kidney to the pan and sprinkle with lemon juice. Cook for another minute, seasoning with salt and pepper to taste.
