Instructions

  1. Add oil to a pan (cast iron is best, but any will do) and bring to high heat.
  2. Remove a Riverence fresh frozen fillet from the package and place it skin side down in the hot pan. That’s right — no thawing necessary!
  3. Brush olive oil on the top (flesh side) of the frozen fillet, and gently sprinkle salt, pepper, and smoked paprika on top.
  4. Cover with a lid or splatter screen and allow fillet to cook for 5 minutes.
  5. Uncover, flip the fillet flesh side down, and cover once more.
  6. Allow the fillet to cook for another 5 minutes, and then flip back over to the skin side down.
  7. Your fillet is ready to eat when it has reached an internal temperature of
  8. 145°F or flakes easily with a fork! The trout should be slightly firm to the touch, but not overly well done.
  9. Tip: For an extra punch of flavor, drizzle and simmer Ginger Sesame marinade over the flesh side of the fillet at the end of the pan process.
