From the High Country to Your Table

In the early 1990s, Chris Walker set out to bring Full Blood Japanese Black Wagyu to Australia — but Japan had no direct export protocol. So he routed through the United States: 84 females and 3 males shipped to the US first, bred there for several years, then 40 females and 9 young bulls finally made the crossing to Tarana, NSW. It was a decade-long bet on genetics that no one else was willing to make.

Today that founding herd numbers in the thousands across several farms — all above 1,000 meters, with clean air, natural shelter, and low-stress pasture. Japan's 1997 export ban means herds like this one can never be replicated. Every animal is grain-fed for a minimum of 400 days, and every carcass is assessed using MIJ Camera technology that measures marbling abundance, fineness, and ribeye area — no subjective scoring, just data fed back into every breeding decision.

What Sets This Wagyu Apart

Most marbling scores measure quantity alone. Stone Axe goes further: MIJ Camera technology evaluates both abundance and fineness of intramuscular fat. Fine, evenly distributed marbling at BMS 9+ delivers a richness that coarse marbling at the same score simply cannot match.

USDA Choice

Light marbling with visible lean sections. Good everyday beef, but limited intramuscular fat distribution.

USDA Prime / High-Grade Wagyu

Moderate to heavy marbling. Rich flavor and tenderness, but marbling can be coarse and unevenly distributed.

Why Full Blood Matters

“Full Blood” means 100% Japanese Black Wagyu genetics — no crossbreeding, no dilution. Crossbred Wagyu (F1 through F4) carries between 50% and 93.75% Wagyu genetics; only Full Blood animals can consistently produce the fine, evenly distributed marbling that defines a true BMS 9+ score.

Stone Axe maintains this genetic purity across a closed herd of several thousand head. Japan banned live Wagyu exports in 1997 — meaning the original genetics Chris Walker brought over can never be sourced again. This herd is irreplaceable, and every breeding and feeding decision is made with that in mind.
