What is Lingcod?
The lingcod, also known as the buffalo cod or cultus cod, is a fish of the greenling family Hexagrammidae. The mild-tasting meat of lingcod is tender yet firm, with large, soft, moist flakes. It provides around 18 grams of protein and only 1 gram of fat per raw 4-ounce serving, making lingcod an excellent source of lean protein. Lingcod works well on the grill, and large lingcod can be stuffed with vegetables and baked, and this fish lends itself well for an upscale fish and chips - a Pacific Northwest favorite.

Like most fish, Lingcod fillets should be cooked to an internal temperature of 145°F.

How to Cook Lingcod
- Oil fillet and season with your choice of herbs
- Add oil to pan and heat over medium-high
- Sear about 2-3 minutes per side
- Baste with juices
- Cook until internal temp reaches 145°F
- Rest for 5 minutes
- Slice, serve and enjoy!
