Flat iron is a tender, well-marbled cut that rewards a hot pan and a careful eye on temperature.

Directions

  1. Season generously with salt and pepper.
  2. Heat oil in a skillet over high heat.
  3. Cook for 3-4 minutes on the first side.
  4. Flip and cook another 4 minutes, then continue flipping every minute until the internal temperature reaches 135°F.
  5. Remove from the skillet and let rest, covered, for 5 minutes.
  6. Slice and serve.
