How to Grill Ribeye Steak

Medium heat, quarter-turns for grill marks, 135°F off the fire. A ribeye worthy of its reputation.

A ribeye carries enough fat to handle a longer grill — 350°F gives the marbling time to render without scorching the crust.

Directions

  1. Oil the ribeyes and season with salt and pepper.
  2. Preheat the grill to 350°F (medium heat).
  3. Place the ribeyes in the center of the grill over direct heat.
  4. Cook 4 to 5 minutes, then rotate 45° for cross-hatched grill marks.
  5. Grill another 4 to 5 minutes, then flip.
  6. Cook 4 to 5 minutes, then rotate.
  7. Finish for another 4 to 5 minutes, or until the internal temperature reaches 135°F. Total cook time runs 15 to 20 minutes.
  8. Remove from the grill and rest for 10 minutes before slicing.
