How to Cook Frozen New York Strip

A reverse-sear method that takes a frozen strip from rock-solid to medium-rare without any planning ahead.

Frozen strip steak, seared on the stovetop and finished in a low oven. No overnight thaw required.

Directions

  1. Preheat the oven to 325°F.
  2. Defrost the steaks for 2 to 3 minutes by submerging them, still in their vacuum-seal wrap, in a pot of cool water. This helps salt and pepper adhere. Alternatively, thaw on the counter until the surface softens enough for seasoning, about 5 to 10 minutes.
  3. Heat a skillet with oil about 1/8 inch deep.
  4. Sear until browned on all sides, about 90 seconds per side.
  5. Transfer to a wire rack set into a rimmed baking sheet.
  6. Finish in the oven to your preferred doneness, 18 to 20 minutes for a 1-inch-thick steak.
