How to Grill Flank Steak

Flank steak rewards a hot grill and a careful eye on temperature.

Directions

  1. Oil the flank steak and season with salt and pepper.
  2. Preheat the grill to 400°F (medium-high).
  3. Sear for 1 to 2 minutes, then rotate.
  4. Cook another 2 to 3 minutes, then rotate again.
  5. Cook another 2 to 3 minutes, then flip.
  6. Continue grilling until the internal temperature reaches 135°F, about 5 minutes more. Total cook time runs 10 to 15 minutes.
  7. Remove from the grill and rest for 10 minutes before slicing thin against the grain.
