Roast It or Slice It

One cut, two ways to win the holidays.

Roast It Whole

Low first, hot last. A slow oven gets the inside rosy from edge to edge, and a quick blast of heat at the end builds the crust. After resting, lift off the rich, marbled cap and carve it separately so everyone gets a piece.

Slice Into Ribeyes

A rib roast is ribeyes before they’re cut. Slice a two-rib roast in half and you’re holding two extra-thick bone-in ribeyes. Portion it yourself for holiday dinners, gifting, or stocking the freezer.

How big a roast do I need?

Plan about 1 lb per person bone-in, ½ lb boneless, and less for Wagyu, since it's richer. Want leftovers? Size up one.

How much to buy

Plan on about a pound per person, or one rib for every two guests.

Salt ahead

Season a day or two early and leave it uncovered in the fridge. The salt works its way in, and the surface browns better.

Pull early

Take it out at 120–125°F for medium-rare and rest it 20–30 minutes. It will climb another 5–10°F while it rests.
