Margaret River Wagyu from Australia represents the gold standard of Australian Wagyu production, where cattle are raised on pristine pastures before a grain finish that enhances marbling. Mishima Reserve, our American Wagyu partner, crossbreeds Japanese Wagyu genetics with traditional American breeds to create a perfect balance of marbling and robust flavor. We've spent years building relationships with these producers to secure preferential access to their highest-grade cuts—many of which never reach traditional retail channels.
